Tasty barley with meat
Tasty barley with meat is a classic breakfast of a tourist or a summer resident. Barley with meat is cooked very simply, I advise you to cook in a roasting pan, as this cereal likes to burn, but you can’t open the lid and mix the dish during cooking. In the recipe, I used lean pork, which can be replaced with lean beef, will also be delicious. You can cook barley with fat meat, but, for my taste, it will be too high in calories.

Pearl barley is crumbly, pork is tender and breaks down into fibers, and carrots with onions and tomatoes perfectly complement meat and porridge. Barley with meat is a hearty, healthy and nutritious dish for the whole family from affordable, inexpensive products.

Ingredients for Delicious Meat Barley
- 400 g lean pork;
- 240 g of pearl barley;
- 1 onion;
- 1 carrot;
- 2 pods of fresh chili peppers;
- 2 tomatoes;
- 3 cloves of garlic;
- 3 bay leaves;
- 1 teaspoon suneli hop;
- 1 teaspoon coriander seeds;
- 25 ml of cooking oil for frying;
- salt.
The method of preparation of delicious barley with meat
We measure pearl barley, four large portions of one large mug are enough, it holds about 230-250 g. You need to cook the dish in a roasting pan with a lid or in a pan with thick walls and a thick bottom.

Soak the cereal in cold water for several minutes, drain the water, rinse under the tap with cold water. Pour two cups of water into the roasting pan, pour the pearl barley, put the roasting pan on the fire, heat to a boil.
By the way, I advise you to sort out the pearl barley so that surprises in the form of small pebbles do not appear in the finished dish.

Fry in a preheated refined vegetable or olive oil a chopped coarsely chopped onion head.

We add coarsely chopped carrots to the onion, you can add a little more celery, if you like this vegetable.

When the vegetables are soft, put the pork chopped into slices into a pan. Fry the meat with vegetables for several minutes so that the pork grasps only a little.

We spread the meat with vegetables in a roasting pan with boiling barley.

Then add the pods of fresh chili pepper, bay leaf, chopped garlic and tomatoes. Instead of tomatoes, you can add 2-3 tablespoons of tomato puree.

Pour salt to taste, suneli hops and coriander seeds roughly ground in a mortar. Instead of these spices, you can take curry powder for meat or ground red paprika.

Close the roasting pan tightly, make the smallest fire, cook 1 hour. Then remove the porridge from the stove, wrap it with a towel, leave it for 15-20 minutes to steam.

To the table, pearl barley with meat serve hot, bon appetit! A fresh vegetable salad and homemade ketchup complement the dish well.

Barley with meat can be preserved. You need to spread the hot porridge with meat and vegetables in a sterilized floor liter jars, cover with lids, put in a large saucepan on a towel. Pour hot water so that it reaches the shoulders, sterilize for 30 minutes, roll up. Cool and store canned food in the refrigerator for no more than 1 month.
