Rich cabbage soup with cauliflower and potatoes
Cabbage soup with cauliflower and potatoes is a thick and hearty chicken broth soup, in which we add a little red lentils for density, and for piquancy - zira, mustard seeds and turmeric. Cabbage soup will turn out golden, rich, awesomely tasty! I cooked this soup in early summer with young potatoes, and it turned out well.
I advise you to cook chicken broth in advance. For the broth you will need half a small chicken, garlic, carrots, onions, bay leaves, chili and a bunch of fresh parsley, spices to taste.

Ingredients for cabbage soup with cauliflower and potatoes
- 2 l of chicken stock;
- 1 onion;
- 2-3 cloves of garlic;
- 1 pod of chili pepper;
- 2 carrots;
- 2 tomatoes;
- 1 bell pepper;
- 400 g of new potatoes;
- 400 g of cauliflower;
- 100 g of red lentils;
- 1 teaspoon mustard seeds;
- 1 teaspoon of zira;
- salt, refined vegetable oil.
The method of preparation of rich cabbage soup with cauliflower and potatoes
Put half the chicken in the pan, add a bunch of parsley, a couple of cloves of garlic, chili, onion, bay leaf, pour water, salt, cook for 1 hour. Filter the finished broth through a sieve.
If there is no finished broth, then it can be replaced with water and two broth cubes.
Pour 2 tablespoons of refined vegetable oil into a soup pot with a thick bottom, put the pan on fire, as soon as the oil is heated, put the chopped onion.
We clear the cloves of garlic from the husk, crush with a knife, chop. Chili cut in half, remove the seeds, cut finely.
Add chopped chili and garlic to the onion pan.
Pour teaspoons and mustard seeds over a teaspoon, fry them all together over moderate heat for several minutes until the mustard seeds begin to click.
Carefully wash the carrots, scrape, shred them in narrow strips. You can also chop carrots using a vegetable cutter or grate on a vegetable grater.
Add carrots to the pan, fry for several minutes, pour ground turmeric.
We cut red tomato into cubes, add to the fried vegetables. Tomatoes can be replaced with tomato puree or tomato paste.
We cut the sweet Bulgarian pepper in half, remove the seeds, cut the flesh into cubes. Put the chopped pepper in the pan.
Small young potatoes are thoroughly washed with an abrasive layer with a sponge; such a sponge will not only wash the potatoes well, but also peel them.
Cut the tubers in half, put in a pan.
We disassemble a head of cauliflower into small inflorescences, cut the stalk into thin slices. Add the cauliflower to the rest of the vegetables.
To make the cabbage soup thick, you need to add an ingredient that thickens the broth. In this recipe, red lentils - it will quickly boil and give thickness to the givers. If there is no lentil, then stir 2 tablespoons (without a hill) of wheat flour in a cold broth, and pour the mixture into the pan at this stage.
So, pour red lentils into the pan.
Pour the chicken stock.
We bring cabbage soup with cauliflower and potatoes to a boil, cook over low heat for 30 minutes, at the end, salt to taste.
Serve the cabbage soup on the table hot, sprinkle with finely chopped herbs.
